Idiappam

Ingredients:

1. 2 cups of rice flour
2. 1/2 cup of grated coconut
3. 1/4 cup of cooked rice
4. 1 teaspoon of sugar
5. 1/2 teaspoon of active dry yeast
6. Salt to taste
7. Water as needed
8. Oil for greasing the pan

Equipment:

1. Idiappam maker
2. Steamer or idli cooker



Steps:

Step 1:
Wash the raw rice under running water until clear. Soak it in enough water for 4-6 hours.
Step 2:
Drain the water from the rice. In a blender, combine soaked rice, grated coconut, cooked rice, sugar, yeast, and salt. Grind to a smooth batter. Transfer to a bowl.
Step 3:
Allow the batter to ferment for 8-10 hours in a warm place.
Step 4:
Stir the fermented batter gently. Adjust its consistency by adding water if too thick.
Step 5:
Grease the idiappam maker with oil. Fill it with the batter.
Step 6:
Steam the filled idiappam maker in a steamer or idli cooker for 7-10 minutes.
Step 7:
Once cooked, gently remove the idiappam from the maker using a spatula.
Step 8:
Serve hot idiappam with coconut milk, stew, or curry.
