2. 1/2 cup of grated coconut
3. 1/4 cup of cooked rice
4. 1 teaspoon of sugar
5. 1/2 teaspoon of active dry yeast
6. Salt to taste
7. Water as needed

Steps:
Step 1:
Wash the raw rice under running water until the water runs clear. Soak the rice in enough water for 4-6 hours.
Step 2:
After soaking, drain the water from the rice. In a blender, combine soaked rice, grated coconut, cooked rice, sugar, yeast, and salt. Grind to a smooth batter consistency. Transfer the batter to a large bowl.
Step 3:
Allow the batter to ferment overnight or for at least 8-10 hours in a warm place.
Step 4:
Before making Aapam, stir the fermented batter gently. If the batter is too thick, adjust the consistency by adding a little water.
Step 5:
Heat an Aapam pan or skillet over medium heat. Grease it lightly with oil.
Step 6:
Pour a ladleful of batter onto the center of the pan. Lift and swirl the pan in a circular motion to spread the batter thinly towards the edges.
Step 7:
Cover the pan with a lid and cook for 2-3 minutes or until the edges turn golden brown and crisp, and the center is cooked through.
Step 8:
Once cooked, gently remove the Aapam from the pan using a spatula and serve hot with coconut milk, stew, or any curry of your choice.
